These buffalo chicken stuffed sweet potatoes are the perfect combination of sweet and spicy. Delicious, filling, and tasty - what more could you want?

Ingredients
  • 1.5 lb cooked chicken breasts
  • 3/4 c mayo
  • 2-3 Tbsp Frank's Red Hot Original
  • 1/4 sweet onion diced
  • 2-3 Tbsp chopped fresh chives
  • 4 large sweet potatoes
Instructions
  1. Preheat the oven to 405°
  2. Puncture the sweet potatoes all over using a sharp knife, then wrap in foil.
  3. Place on a baking sheet covered with parchment paper and bake for 1 hr.
  4. While that's baking, shred the cooked chicken breasts. (If you have a KitchenAid mixer, try cutting it into chunks and using the paddle attachment on a slow speed!)
  5. In a large bowl, combine the shredded chicken, mayo, hot sauce, diced onion, and chives and stir to combine.
(This makes 4 cups of chicken salad, so you'll have extra!)
  1. Remove potatoes from the oven and allow to cool for 10 mins or so.
  2. Slice lengthwise, and spoon the chicken salad into the potato.
  3. Top with fresh chives and serve.
