    13 Delicious AIP Easter Desserts

    In my opinion, no one should have to live without dessert. Even with dietary limitations, you can serve these beautiful AIP Easter desserts at your gathering and wow your friends and family.

    Pies, fruits, cakes, cookies. Pastel colors and vibrant springtime desserts seem to always grace the table at Easter. But what about those who can't eat traditional desserts without serious repercussions from their body?

    I'm here to tell you, you don't have to go without. You can enjoy the easter desserts right alongside everyone else.

    And, serve these at your Easter gathering and you might even show your guests the benefits of eating slightly healthier - no terrible stomachaches afterwards!

    What is AIP

    For those who aren't familiar, AIP stands for Auto Immune Protocol. The AIP diet is a diet that aims to reduce inflammation, pain, and other symptoms caused by autoimmune diseases.

    When my husband was diagnosed with sarcoidosis 2 years ago, we immediately started researching food and dietary changes. We already ate paleo for the most part, and had been for years.

    I started diving into the world of AIP and seeing how we could take it a step further to hopefully make some changes that would help ease his symptoms.

    It was definitely challenging - AIP is even more restricting than paleo, and even more substitutions and eliminations are required. Additionally, you have to stick with it for a number of months to determine if it's working for you or not.

    I relied pretty heavily on Michelle's website, Unbound Wellness, when we were experimenting with AIP. You can find her post detailing the AIP protocol and what you can and can't eat here.

    I also developed a couple of AIP friendly recipes during our time that turned out to be family favorites that we still make today" Autoimmune Healing Bowls and 3 Ingredient Fudge Pudding.

    All in all, it turned out that eating an AIP diet didn't really make a difference on my husband's symptoms. We found it to be very restricting, without seeing results, so we have since moved back to a mostly paleo diet.

    (For those wondering, we believe the sarcoidosis was related to stress. Once his stress level was reduced, his symptoms all but disappeared. Just goes to show you how the mental is related to the physical.)

    There's nothing worse than gathering with friends and family and feeling awkward about having to turn down certain foods. It's common to be questioned, told that your way of eating is wrong or made up, and quickly dismissed.

    For those who suffer from autoimmune diseases and inflammation, you know that it's not made up, and that you really do feel better when you eat this way.

    Now, there are lots of AIP recipes out there, and even lots of AIP dessert recipes. A lot of the ones that come up, though, are more related to winter holidays.

    Recipes trying to replace comfort foods, warm, spicy things for Thanksgiving and Christmas like AIP Pumpkin Pie and Sticky Ginger Pudding.

    In the springtime, we look for bright, fresh, flavors. Fruits, pastel colors, and fun AIP easter desserts - so we can still enjoy the dessert without the repercussions.

    Things like easter egg shaped marshmallows, fruit pies, sugar cookies, and fresh frozen treats. Homemade lemon jello topped with coconut whipped cream. Herbal and lavender marshmallows to go in a cup of tea.
